I have the opportunity to do some aerial photography with my bixler using a GOPRO flying in a Lawnmower style pattern. I'm not sure whether or not I should do video or a series of pictures every few seconds.

What I would like to do is create a stitched together Image of the whole plot, but were talking at least 50 acres at a time. Does anyone have experience with this? OR have any Idea what the best way to go about this would be?  I have a hex core cpu with16GB of Ram and twin Video cards so I should have the processing power to crunch the numbers if only I could find a program that could do the work.

I appreciate any and all help.

Will,
as you might know the GoPro is not the best camere to be used for aerial photography. The disortion is really big, the images are about 8mpix big but are noisy. Anyway it works, if you don't want to have centimeter precise pictures.
I would suggest you try Hugin for stitching photos together and vReveal for computing panoramic views from videos. vReveal as freeware is limited in the output size of the images, but gives you a good lookmat what the software does. Hugin is freeware and for image stitching one of the best software products I know.
Good luck and post pictures if you managed to make some nice views.

I agree with Marc.  The distortion of the GoPro will really add to the workflow.
