I was looking through the legacy releases of the APM:Arduplane source code for version 2.78b but it no longer appears to be available/downloadable from the repository. The firmware appears to still be available for v2.78b but not the source for developers. Is there a reason that the source for release 2.78b is no longer available, unlike earlier legacy versions.

The releases get a git tag associated with them. So to get the exact code for ArduPlane-2.78b you would get a git clone of the repository and then do "git checkout ArduPlane-2.78b"
Alternatively, if you want a zip file, you can go here:
https://github.com/diydrones/ardupilot/tree/ArduPlane-2.78b
and then click the "download zip" button in the bottom right of the page. That will get you this file:
https://github.com/diydrones/ardupilot/archive/ArduPlane-2.78b.zip
