One of the motors on my drone stopped working. I went to replace it with a new one and I soldered them all back on but while putting everything together a connector popped off. This is on a 3DR Iris +.

you have torn of a pad. (not connector)
That happens due to too high temperature and/or high temperature over too long time.
The ESC can be used, because it's possible to find those thick traces nearby, maybe on the solder side of the PCB or connect directly to the FET's, - even if that requires to remove heatsink, and/or improve connection between FET's by adding extra wire. (it should not be connected to only one.)
- but that requires much better soldering skills than the soldering in picture, so I would suggest you try to locate somebody to help you.
