Is it possible to make your mission from a computer at home and load it before you go fly. I would like to do this but it wants the home position. If I plan the whole thing out what will happen after it locks on a GPS signal in the field?

In the APM, "Home" position is normally set to the position you powered-on the airplane ( after GPS lock, of course). In your case, the correct thing will happen so long as the pre-configured "Home" is actually your planned take-off point.
Should you take-off from a different location, then your mission will still be take-off point -> 1 -> 2 -> take-off point.... but its won't necessarily be the exact triangle shape you see below.
