A few of us are working on a little project at work during our down time. We had some pretty successful results and managed to do it on the cheap with some parts around the lab. I thought it would be worth sharing with everyone since we were able to gather quite a bit of good data. All we used was a cantilever beam, two strain gauges, two Arduino boards, one signal conditioning box, and a student version of LabVIEW. All in all it was about $300 of stuff but they are all very useful for other things. The attached files are:
