Yes!! You can reassign functions to channel. For example, I have a helicopter where channel 1 is throttle but on an airplane, aileron is channel 1. This is because I've migrated most of my models that were on either Spektrum or Aurora9 transmitters on to the Taranis without changing their receivers. Of course the Taranis will require their Tx modules to fly those receivers.
