Is there a type or brand of wire I would be using when extending my ESC or motor wires? Should i be using solid or stranded wire?

I would highly recommend stranded wire.

It is more flexible, whereas solid wire will tend to fracture at a joint with vibration.

I would also add when selecting the wire to use make sure the thickness of the core wires are the same, you will find many types of wire but you need one which is as easy to flex just like that of the wire which is already connected to the esc.

Thank you John and Martin for your replies. Should I be concerned with the temperature ratings of the wire?  I've noticed that different wires have a huge range of differences.

The wires should only get a little "warm" as they conduct a little of the heat from the esc's, I would like to think that a wire would not get close or above 40c or there would be a huge problem somewhere else in the system. The esc's can get hot, but still this should not be hotter than you can hold without it feeling uncomfortable.

The thicker the wire, more current can it conduct, so, a thicker wire tends to get less hot, since electrons flow freely just like in a highway (more lanes, more traffic flow). However, too thick and it it will be more expensive,  more heavy and harder to work with, without necessity. I advice you to use the same type originally connected to the ESC (usually 16awg or 14awg). Also silicone isolation is more flexible and heat resistant than regular pvc.
Thank you everyone for your help! I'm trying to build my third hexa and want to get everything right since I've lost two of them already, with FPV gear, GoPro etc. I've also lost an EasyStar so I'm just hoping to end my string of bad luck by rechecking everything...
