We've been trying to prep and fly 3 pairs of Xbees on 3 rc planes for the past week. We've had repeated issues with the Xbees all the time. Sometimes it would connect and work great. On other days it would disconnect. No issues with the boards as we can swap to a different one.

This weekend, one of our perfectly fine working Xbee pairs just stopped working when we went out to fly. And another pair would just basically interfere with the laptops touchpads or desktop wire mouses it's connected to. Keep in mind that we always only have one pair of xbees powered and connected at a time.

We have already gone through many times of using XCTU to rebind them.
