I just purchased a Striker Spy Drone with a picture and video camera for my son. I know it's on the low end of "quality" drones, but he's only 7 and thought it would be a good introduction to the hobby. Anyway, we are able to fly it, and the color of the lights indicate the camera is operating, but, nothing ever saves on mini SD card. Any help would be greatly appreciated.

Are you able to verify the SD card is working? Can you put it in another device like a phone or PC? Check that it is formatted and functioning in another device.

Double check your SD card is inserted correctly. Maybe upside down or not really in the slot? Sometimes this happens on my pixhawk ap SD card slot. The card is in there but not inserted correctly.
