Im new in this and wonder if the arducopter (w/6 engines) can fly with one engine failure. Maybe it will decend and make a "soft" landing, or will it go crazy and crash?

No it cannot without I2C ESC Speed controllers. Even then it's a difficult problem and requires the opposing motor to spin in reverse.


What about an octocopter configuration? Does that require I2C ESC to fly with a failed motor?

What is the difference between an i2C ESC and a regular ESC? Please explain.
