I have several large baseball, and multi soccer field parks wthin walking distance from my house...if no one is there can i take off and land there?

You may also want to look into buying a RC flight sim such as realflight, as it will help you greatly to train your "instincts" if you find it difficult to fly. But if you have a small foam/electric aircraft flying at the fields you mentioned would also fine.
But heading down to your local flying fields and talking to people there would also be a great place to start
No you don't have to fly at airfields, probably best if its for you and your son (oh yeah I try that excuse as well) to just get yourself a simple RC airplane first and learn how to fly that then start into the world of UAS.
Look for a local model club and take your sun to watch them fly. He will enjoy it and you will get a feel for whats what.
Welcome and I hope you enjoy a cracking hobby.
