It would be easy to do if the wind were zero, but the wind is going to make it tricky. You need to know the wind accurately. My wind estimation algorithm assumes zero angle of attack and side slip, so in steady state, I think if you tried to compute side slip and angle of attack, they would come out to be zero. You might be able to determine sudden changes in the angles.
I will give it some more thought, if I come up with anything, I will get back to you.
