I am in the process of building my own frame, but I noticed that most DIY frames seem to mount the motors directly onto the frame, is there any reason why arducopter has the mounts with a single bold through the frame and then 2 supporting it to stop it rotating? Is this to reduce vibrations?
Also does anyone else have some tips on reducing vibrations other than mounting the electronics/electronics mount on with rubber/foam?

There are multiple reasons for that. To have versatile mounting area, illumination for night flying, vibrations, robustness of mounting and so on.
Most important thing on vibrations is to kill vibrations on their source area which is close to motors/propellers. Even same motors have different type of vibrations.
Also your electronics and their resilience for vibrations plays a big role on over all design.
