So recently my Futaba 7c was stolen and I'm considering switching to a DX8. Does anyone who's made this switch have any feedback? How's the menu, ease of making changes? Any Pro/cons between the two?

The 8FG is really nice. Good feel on the gimbals, etc. It's only 7.2 volts so I have to order a 2 cell lipo instead of the 3 cell to power it.
Options are nice, menu is complex. In ways it's nice to have so many switches, but sometimes, it's a real pain when you don't need very complex mixing and such (basic quad). It feels like a big step up from the 7c.
I see that you've already purchased a radio but maybe this will be helpful for someone else in the same boat. When I was looking at the Spektrum DX8 a few months ago I was not impressed at all. It felt very clunky and poorly thought out in terms of the physical build and the firmware interface. That's purely my opinion though.
Something not based on my opinion is the popular "Orange" receivers people use with Spektrum transmitters are DSM2. The newer Spektrum transmitters will do DSMX or DSM2, a lot of users don't realize how different they are and pickup the cheap receivers.

The sales guy at the shop was pointing out how so many third party products work with the Spektrum transmitters out of the box, later I found out almost all of them (if not all of them) use DSM2. That pretty much shot down the only benefit to buying a Spektrum transmitter in my eyes.
Don't do it. The receivers have some cool tech like on-board voltage regulators and such but the system is quite prone to interference from cell towers. In particular, the directional 2.4Ghz or 5.8Ghz point to point connections between the towers. Fly between two cell towers and there is a 50-50 chance of getting knocked down with Spektrum, but only 5% or less with Futaba.
At one of out local fields everyone has switched away from Spektrum due to interference issues from a cell tower 3km away.
Better yet, switch to 433 and be done with it... spread spectrum frequency hopping and encrypted (with some versions)

Don't do it man. Seriously, I hear nothing but problems in my club too. This is like saying "My Toyota was stolen so I'm going to buy a Chrysler."

I dont have any experience of the spektrum other than seeing sevel guys with problems at the club site even on 2.4
I can say that I have been using 6EXA and 7C Futaba for many years in RC and I have never had ANY problem, no gliches and no worries. For me its peace of mind even if it costs a bit more. cheap insurance.
never yet managed to fly out of range even with a 110" piper cub. Yes, its in my new UAV ready for test flights !!
