Using A Hex Frame As A Quad: Yes or No?

Hey guys! I currently have a 550mm hex that I built. I use DJI E300 motors & ESCs, an APM 2.6 FC, and a "Hobby Power F550" frame from Amazon, which is basically just a cheaper copy of the DJI F550 Flamewheel. I've been wanting to get more lift to be able to add things like a gimbal, retractable landing gear, lights, and more batteries for longer flight times. In order to achieve more lift I plan to upgrade my hex to a quad X8 by getting the AIMDROIX aluminum arms and dual motor adapters so I can run two motors on each arm. I have already purchased the extra motors & ESCs.My question is this: Although I am changing my frame configuration from hex to quad X8, can I still use my hex frame? I want to use the hex, but simply take off two arms opposite of each other so that there will only be four arms. After doing this, the copter will be about 12" long, but nearly 20" wide. Is that alright? Do you think the APM2.6 will still be able to maneuver the vehicle properly even though it is not in a "traditional" quadcopter configuration where each arm is equally distanced? The images I have attached are not mine, but rather just images I pulled off Google to illustrate what I'm talking about. On the hex frame, imagine pulling off the two white arms, then flying it as a quad X8. That is what I would like to do.Thanks for you help!
