One of my ESC's seems to be having problems. It just causes the motor to sputter. I've isolated the issue to the one ESC (other ESC's in it's place work fine).
Is there a manual for the ESC?

It does this when it arms or even at 1/2 throttle etc?? If it only does it when first armed try lowing your end point PPM value [ on your TX ] to under 1000 then do the 'calibrate radio' again. Then recalibrate your esc's again. I have no idea if this is it but it's worth a try. Some brands of esc's won't calibrate right if the low end point isn't below 1000 PPM.
I'm having the exact same issue - one ESC on the hexacopter (with APM 2.0 though) "sputters" and I've also isolated the problem to the ESC. All the connections are good and I'm wondering the best next steps - do ESC's break? should I get a new one? I've actually never flown this hexacopter and the ESC is totally new so it shouldn't be , like "broken" . Should I rip off the yellow heat shrink and test the connections on board?
