I am building a 250 mini quad for my nephew, and I am trying to decide on motors. I am NOT looking to build a quick agile racer, I'm looking for more of a slow easy to fly quad.
Would there be any difference in ease of flying between 1900KV & 2300KV motors?
What are some of the advantages/disadvantages between motor sizes, besides price?

If you use the standard 5X3 prop you will hover at a higher throttle with the 1900kV, I don't recommend it as you may not have a lot of overhead if you are carrying a payload.
I am using 2150kV multistar motors, I hover at a little over 50% with a small payload (FPV gear and keychain camera).
