I'd be interested in working on this with you, if you'd like. I have a design almost ready to go, just need to model it so it can be 3D printed. The 5-hole probe itself will be machined on a lathe. Hole sizes around 0.032" (1/32"). I'm just getting caught up now, trying to find how to attach the "nipples" for the air lines to go from the aluminium probe to the sensors.
The electronics will be mounted in the wing and with a small controller be able to talk to the APM over i2c.
It will be made to mount to the top of the APM2 (1.6x2.6").

I haven't seen any. There was a good discussion from 2009, and some of the members (search Angle of Attack) might have gone on to do this.
