Can anyone offer a definition or "official" or commonly recognized difference between an Amateur UAV and an RC Model?

technically speaking a uav is any aircraft without a pilot in it (and this is straight from the FAA).
a rc aircraft is a type of uav . the main distinction that the FAA makes is commercial or hobby use.

Short form: A UAV has the ability to fly autonomously to GPS waypoints.
