Can someone please tell me what pins I need to connect the Xbee (with Diydrones xtreambee board) to the APM if I'm not using the oilpan (and this not having the telemetry pins)

just use those normal FTDI pins. If you look bottom of APM board you will find FTDI right side of sparkfun.com text. There you will have all same pins as in telemetry port except that is Serial0 while telemetry port is Serial3.
