I have an off the shelf Easy star which comes with a Hi-tech Neon-ss FM 72mhz radio, a three plus possible mode switch ch4. May I use this for my control switch on Ardupilot V2?

Probably. But if it's not a toggle switch, you'll have to be careful to put it in exactly the right position for the modes.
