do i need the internet for the mission planner to work at the field ?
what in flight commands are available with the current MP ?
can i adjust the gains mid flight ?
can i add waypoints while in the air ?

No, you do not need internet at the field. You can pre-fetch the maps.
Lots of flight commands are available. Read the wiki (of course).
