Someone over the summer posted about building a full sized plane using Arduplane/APM for control
using possibly windshield wiper motors for the servos... I stumbled on this today:

These servos are designed to be able to be overpowered by the pilot at the controls in the case of runaway. I believe they do this with an internal clutch mechanism.
I think that Dynon also supply to the UAV industry currently.
