How do you "nudge" the APM to fly in different flight modes and what is the default failsafe flight mode?

Guys,

I just maidened my Skywalker with APM and it performed waay better that what I expected. I say we have a winner in ArduPilot Mega. My flight modes are the default (MANUAL, STAB and RTL). I kept on reading that one can "nudge" the APM to fly in different modes. How can we do it? Another question: in default settings, what is the default flight mode when Failsafe (say brownout in Spektrum) is initiated? Thanks, guys!

Information on programming the flight modes can be found here. As for the failsafe I haven't bothered with it on my radio or APM.
