I am wondering how much Elapor the MediaTek will function through (if at all)? My Garmin eTrex Vista still gets signal inside the easystar but I cannot see if the MediaTek is :D

Tens of feet. Maybe much more. No worries.
In theory, enemies of the signal are things which tend to absorb (for example water and water containing substances such as leaves, wet wood) or reflect (ex. metal) microwaves. Glass, paper, many plastics are nearly transparent. Composites do get complicated since there are so many combinations of fibers (glass, carbon, kevlar) and resins (polyester, vinylester, epoxy) it can be hard to generalize with them but don't wrap it up in carbon fiber and you should be OK.
In practice, aside from metals, anything light enough to fly should be thin enough to not be an issue with your signal.
