Multiple serial or analog sensors with ArduPilot Mega 2.6

Hi,

I'm using APM 2.6 to steer and navigate a device that moves on water. I wan't to install several serial or analog water quality sensors. Can I use APM 2.6 to read several serial sensors and for example log sensor data to telemetry log?

Would it be easier/better to use another unit like Arduino or Raspberry Pi for the job?
