New way to TX/RX

Ok guys, I am COMPLETELY new at this, so please forgive me and feel free to shoot holes in this.

I am wanting to build a drone that is pretty hefty and could drag up a forward looking video, full autopilot, downward looking video, and downward looking thermal.  So I was looking into how the best way to offset all the frequencies, but why can I not combine everything into one?

I was thinking of why can I not put a pico computer on there (something like this, http://www.linuxfordevices.com/c/a/News/Atom-squeezes-onto-PicoITX-board/) have it interface with all the cameras and autopilot, and just send everything together back to the ground link via wireless-N?

I realize your adding a bit of weight with the board and power for it, but it seems like combining everything into one stream would be a bit easier and have a bit more available bandwidth.  So what am I missing?
