Could you use the ardupilot to right a vessel using just an accelerometer or does it require an extra sensor? Also is there a different way to use the arduino to right a vessel I am interested in using it in a remote control submarine and i want to use the ardupilot to keep it up right and if it losses signal I want it to right it and return it to the surface. I don't necessarily need the GPS. Thanks for any advice.

Way easy. You don't have the issues that an aircraft does. A single accelerometer will tell you if you are upside down. There are other ways too. Simple ball in a cage, mercury switch, etc.
Keeping a submarine upright is usually something they do very well on their own. Heavy batteries & motor on the bottom. Buoyancy chambers at the top. How you are getting it to roll over is what makes me curious.
