I plan on building an Easy Star or something similar for testing, but I may end up wanting to convert one of these to a UAV as well. I'm also considering trying a sailplane for longer flight time down the road.

I'm not sure, but it seems that either(especially the bomber) would require a lot of tweaking since they are built differently than regular planes. Also i'm not sure about cargo space in either, and There is another Stealth Fighter at Nitroplanes which is similar to above but with 64MM fans:

External props are more efficient.
Pushers allow your sensors to look forward. Pullers mean that video has to look through props (bad).
Electrics are quiet and clean, but diesel fuel stores more energy per weight than batteries (so endurance is a lot better than electrics).
Big fuselages have a lot of room, but high drag.
You'll have to decide your priorities, then try for the best compromise.
Room is dependant on your sensors.
Speed endurance altitude can be a load of bull on lots of sites.
Our new platform gets enough of a job done in 20 minutes at 60 kmh, but I would not say it had a range of 20km. Those 20 minutes are flown on standard lipos as well, not military one use, so many of the quoted airtimes you see are from those batteries.

Also I wonder how commercial electric uav's can get 30KM flights.
None of those are going to be ideal, as they are all pretty tight on space. (except for the EZG)
As for dealing with BH, they seem well-meaning but like any business working on thin margins, service has been a little erratic.
