I am using an arduIMU, not thermopiles, so can I change this #define ENABLE_Z_SENSOR 1 to this #define ENABLE_Z_SENSOR 0 ?

I would say yes since you are not using any of those sensors now since you have the IMU. There would be no reason to enable it
