I'm using a a Fly Sky Fs-T6 I'm trying to configure it so I can adjust flight mode. Anyone use a Fly Sky before? I can't figure out how to assign the flight modes.

MIX is a setting inside your Flysky T6. The modes dont need to be changed to fly your copter. They are for you to use if you want to use them. However I would suggest the basic mode you should have chosen is stabilize. I would suggest you try and find a group of fliers in your area to fly with and learn from.
