I'm having trouble wiring this device, I have already taken a look at the data sheets of the LPR530AL, however would appreciate any help on wiring the board. In particular, I would like to know whether both GND connections should be connected to a common ground from the power supply, or whether each of the GND connection on the board has a separate function.

Both the gyro and its sparkfun breakout have only one GND pin.
If you look at page 8 of the datasheet [PDF], there's an application schematic including all the required external components.
Edit: Oh, now I see it. You got a typo in the text there :-) are you talking about this? If so, then you need to wire just one of them to the GND, because as you can see they're connected by a PCB trace. They're the same thing.
As for the other pins:
* 3.3V is obvious,
* ZXY x1 block outputs the analog angular rates
* ZXY x4 outputs the same, but amplified 4 times
* ST pin triggers a gyro self-test (not usually needed)
* HP pin triggers a filter reset (probably not needed)
* PD pin triggers powerdown (don't need this one either)
