What are the differences between an airplane esc and a multirotor esc? If I had an airplane esc and a multirotor esc that had the same specs what would be the thing that means it is an airplane esc rather than a multirotor esc? Would it work to use a multirotor esc on an airplane? Would it work to use an airplane esc on a multirotor?

It depends on the airplane but generally it is ok to use multirotor ESC's on planes. So long as the additional features like braking are not required.
Airplane ESC's generally have additional options that multirotors do not need or features that are considered dangerous. Voltage cutoff in a multirotor is like turning your flying multi into a flying brick.
if you are planning on building your first multirotor, ESC's can make a huge different in performance and save you from a lot of costly crashes. An often overlooked aspect.
This video demonstrates how even the firmware will effect the response of the ESC: For an airplane the first portion of the video doesn't apply. As a slow throttle response is often not a problem. But a multirotor bouncing all over would barely get off the ground.
