Maybe there is a post answering this already, but i find these forums kind of unorganized and very confusing, so I'll just ask...
I have the APM2 and want to see data (and even change waypoints if possible) on my laptop while the plane is in the air. Is that possible? how do I do it? What hardware do i need? Where is the instructions to set it all up, hardware and software?

You want to start by reading the wiki, where you will find information about telemetry and other stuff. That's the "official" documentation for this project. Of course, it is missing a lot, so that's when you should also add the forums.
If you read through the process of setting up a plane or copter, it will help familiarize you with some of the terminology, capabilities and technology.
