I have what seems to be a pretty standard setup which is detailed below:
TX - IRC 600mW 5.8GHz
RX - Uno5800 5.8GHz
Antennas - Circular Wireless Skew Planar Wheel Omni Combo
Cam - RMRC-700XV
My question is that I want to bring my plane with FPV equipment when I visit my Brother who lives on the Prairies in farm country. How he gets his internet is through fixed wireless called Efirehose – Essentially internet is sent wirelessly on a 5.8 GHz signal from a base station x miles away to a receiver on his roof. Now it does not take a genius to figure out the 5.8 GHz system used to transmit internet to his home is pretty freaking powerful. My question is that will his internet connection cause a high degree of interference with my system or will changing the channels on the TX/RX will be sufficient to avoid the interference?

In my opinion, no. Everything in the 5.8 GHz band uses a frequency-hopping scheme that permits hundreds of radios to be in the same spectrum at the same time. Power levels are also limited to prevent interference. The base station does not need to be high powered - in fact that would be counterproductive because the link is bidirectional. As far as your FPV rig is concerned, it's no different from a cordless phone in the area.
Depending on the RF angle from the internet transmitter is, I would say it is very possible for interference. But I'm sure you've already done this since your post was in October. Man, I can believe no one replied to you.
