I'm a newb to ArduCopter and designing a frame, but cannot immediately find and answer to a simple question. Can I change the configuration from a traditional quad (engines at cardinal direction locations) to an X copter (engines at all 45 deg locations)? The software screens shots only show quad, hexa and traditional heli. Any X quad?

Yes, Just mount the APM pointing forward. Indicate which orientation in the planner.
