DIY Drones Post Processing..

Does anyone have any information/experience on post processing imagery taken from a drone for useful humanitarian purpose? Say figuring out ground moisture levels or head counting crowd sizes?

    uSAR? I looking for a software packager or maybe a info site? Something where the resources are so people working with UAV can extract more data from the images.
