Newbie here,
Questions
1) I don't see a "manual mode" setting in Flight Modes pull down box, or is "stabilize" the one to pick?
2) So how do I fly manually?
3) when switching my 3-position switch..
position 1 is Flight Mode 1
position 2 is Flight Mode 4
position 3 is Flight Mode 6
Can I make them .... Flight Modes 1, 2, 3 ????

Acro is a kind of 'manual' mode, the accelerometers are not used for attitude correction so the 'copter would flip if provoked.
I think the mode numbers are intended for a mixed 3+2 postion switches for 6 selectable modes, but it doesn't matter what the numbers are, what matters is what mode you select at which switch position
Stabilize mode is manual flight. Stabilize means the copter will try to stay upright and respond to your stick inputs. I don't follow your mode numbers.
