What's the difference between "auto trim" (selectable with channel 7) and "in-flight levelling" (enabled by arming for 20 seconds)?
I assume that the latter is used to let the ArduCopter learn about its center of gravity and other factors that affect level flight?

They are the same function. It's not worth running in-flight leveling or auto-trim on CH7 since you can access it quite easily by arming for 20 seconds.
