So I think I got it all up and going now how does this look? Only tweeked a few numbers... Is the Z accel number right? I take it when I give it thrust this will be at zero?

You should calibrate your Z axis to show around 408 when it's stable and level on your table or floor. Access Roll/Pitch should be 0:ish. If they are not, use those offset values to make them to be as mentioned eg.
Accell Roll: 0
Accell Pitch: 0
Accell Z: 408
Don't worry about gyro's, they are calibrated automatically on every reboot.
