Is there any software out there that can count a cattle head numbers? Like, I take a serie os pictures and put these pictures in a computer and a software counts the numbers based on image recognition? I don't need real time recognition...

Did you find any software that finds no of crops from aerial image?
Can you color or tag the animals with markings to assist the CV process?
You could also use Amazon's Mechanical Turk. You upload the pictures and pay someone like 15 cents to count the cows. You will get much more accurate numbers.
If the cattle stand out from the background, you could use a program like ImageJ and a plug-in to count the cattle. One of ImageJ's primary functions is to count biological cells on a slide, but you should be able to adapt that to count anything that shows up as a discrete blob.
