Im wonder if there is some option in Mission Planner that allows me to set max fly alltitude. Let say that I don't want to allow my drone to fly above some certain altitude value even if throttle is set to high.

You can achieve this by activating the fence option in initial setup tab under mandatory hardware settings. You can set altitude and distance as well as what it will do when it reaches that value.
