I am aware that it is used for wireless communication, but what exactly does it do?
Does it reflect the readings of air gauges in the ground station? or something to do with google earth?
Or none of the above?

XBee in the mostly used mode is a "wireless serial link". You can send data to/from the autopilot to the ground control station.
I'm not sure wether you already configured your two modules, in case not, this tutorial will guide you along the process:
