The first time I fly, position holding is perfect in all axes.
Subsequently (after I put it to another mode and return it to loiter [?]), the altitude does not hold. When the stick is centered, it either slowly rises (if it was climbing previously) or slowly descends (if it was descending previously).
Any help appreciated!

Sounds like a PID setting to me,
Start by changing the Loiter P value OR ALTITUDE HOLD P a bit higher. If possible , set them on your ch6 dynamic tuning setup. Is this only happening since 3.X?

Perhaps clear your Dataflash logs, then fly it again to create the problem, then post that log here for the boffins to look at.
