You should be fine with a Piper Cub, all the cubs I have flown have had flat wings ie. no Dihedral so will need ailerons to control a turn as opposed to rudder only for a wing with dihedral or polyhedral
As far as I can see at the moment ( I havent been able to put much time in to ardupilot yet because of work commitments ) If copilot will stabilize an existing airframe, then I can't see why ardupilot can't be made to work , of course one must have the relevant programming skills ( I'm still working on that but there is light ) Start by getting familliar with copilot, setting-up, calibrating and trimming the sensitivity in different weather conditions, this will give you a good background to copilot and a good insight into your airframes characteristics

Ardupilot is capable of controlling it, though I am not quite sure what configuration it would require based on everyone here seeming to use 3 channel aircraft.
At anyrate it can definitely be done (some above me has already done it. :P)

its no problem when the cub isnt to small. my 20years old cub weights 2,5kg and is 1,8m wide. it was an 40er ICE mounted but now a Emotor is in place..
to take photos I use a ardupilot with 5Hz-locosysGPS and circle over the hotspots, works great.
