I searched the documentation and could not find any mention of this:
The Xtreme Bee adapter board has a slider switch maked MST<-->SLV (I guess master/slave). So what is the right position?
Also, there's at least one solder jumper on the board marked RTS<>DI03 or something like that. What is it? How should it be used?

The switch should be set to MST (Master). When set to SLV (Slave), it reverses the TX and RX pins. Don't worry about the solder jumper, the adapter board is set up right. If you need further help, the wiki page for your use (ArduPlane/ArduCopter) will have more info, look for wireless telemetry (for the ArduCopter it is http://code.google.com/p/arducopter/wiki/APM2telemetry.
