For mounting on the transmitter for video only I would use something like ebay item 360125372996.
That's a 7" LCD monitor meant for mounting on the dash in a car, but I think that with a small sunshield you would be able to use it on the transmitter. Does not look too heavy either.
For ArduPilot GCS would normally be a laptop with an XBee modem which logs NMEA GPS data and possibly uses it for moving map apps, but no control over the flight is afaik possible at this moment since ArduPilot only has one serial port.
I will soon be using TechFX Motion OSD + IMU with XBee Pro 868 for telemetry and remote payload control with its own included GCS SW in the beginning, and later I will write my own.
I started out in FPV with my camcorder mounted on my shoulder using a professional photography harness which placed the camcorder LCD screen only an inch or 2 infront of my right eye leaving me with both hands fee for my T/X.
But as I added patch antennae for both the 2.4ghz RC transmitter and 900mhz video receiver, things got a littlre complicated, so I am moving to a laptop since the screen is much larger and more light/glare tollerant.
As well, I can now capture the video into an avi or mpeg directly using the laptop, plus I am ready to move eventually to GCS when I upgrade to that in the future.
They(ebay etc) have 7" screens and otherwise you could use a smaller portable tv as they also have composite in. But I think the biggest question is what do you want to display? Video stream or telemetry data or moving map or what?
I would suggest checking ebay, but what do you want to use the monitor for? If for video you can get various small screens on ebay for little money.
I personally use the screen of my laptop with a usb capture card so I have less gear as the laptop handles telemetry logging etc at the same time. (moving map etc also)
Plus my laptop screen is better than the separate small monitors you can buy cheaply and has its own recording function(video capture)
