Once I add everthing I plan to add onto it, it could easily weigh 1200g. It comes sold ready to fly weighing 600g. Besides the obvious problems like balance, can you forsee any problems?

I had an easystar like this. You should set it up as a flaperon. It will fly great but it's gonna come in on final approch fast, and flaps are nice.
