I came across of: Optical flow sensor module @ ardupilo dot .com
I see that based on A3080 chip. The diagram connection from above page uses:
-/+
MISO - serial data output
MOSI - serial data input
SCKL - serial clock input
NCS - and chip select
I am wondering if anyone tried to tear up an optical mouse with ADNS-2051 / A2051 and use
it instead. I see on A2051 (16x16 black) the serial i/o is one pin, and there is no chip select, (there is power down, can be used).

While putting together the ADNS3080 based sensor I looked at a lot of different mouse sensors. The problem with the one you've selected is it's maximum speed (2300fps) might mean that it's low-light performance isn't very good. the cpi of 800 isn't too bad although the 3080 is capable of 1600. You know the 3080 is still available from places like jDrones.
