What are the standard CAN protocols that drones use?

I know that CANaerospace and MAVLink are frequently used, but I am having trouble finding out what DJI uses and what 3DR uses.

How do you output telemetry data from UgCS?

I am trying to find where is outputs the logs of the flights and if it outputs all of the telemetry of the flight somewhere.

Any ideas of how to collect this information would be much appreciated.
